Ingredient List

Barbacoa

  • 2 lb boneless beef chuck roast, trimmed of fat, cut into 2 or 3 pieces
  • 1 box Mezco™ Barbacoa Flavor Duo Sauce and Spice & Herb Blend
  • Water as called for on box

Flautas

  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 16 corn tortillas (6 inch)
  • 1 tablespoon vegetable oil
  • 1 cup shredded barbacoa
  • 1/2 cup shredded Oaxaca cheese
  • Cooking spray
  • 1 cup guacamole
  • 1 cup salsa

Preparation

  1. Cook and shred beef as directed on box, using preferred cooking method. Measure 1 cup shredded drained barbacoa. Refrigerate remaining barbacoa for another use.
  2. In small bowl, stir together corn starch and 1 tablespoon water; set aside.
  3. Working in 4 batches, lightly brush each side of 4 corn tortillas with oil. Place a stack of 4 tortillas on microwavable plate. Microwave uncovered 20 to 30 seconds or until tortillas are warmed and pliable. Keep covered with a clean kitchen towel to keep warm.
  4. Working quickly with one warmed tortilla at a time, place on work surface. Spoon 1 tablespoonful barbacoa down center of each tortilla. Top with 1 generous teaspoonful cheese. Gently wrap tortilla tightly around filling; lightly brush edge with cornstarch mixture to seal. Repeat with remaining 3 warmed tortillas, and place the 4 flautas seam sides down on cooking parchment paper in air fryer basket. Spray tops of flautas with cooking spray.
  5. Set air fryer to 325°F; cook 10 minutes. Turn flautas; spray tops with more cooking spray, and cook 5 to 8 minutes longer or until tortillas are crispy and filling is hot.
  6. Repeat oiling, heating, filling, rolling and air frying with remaining tortillas; serve warm with guacamole and salsa.

Tips

  • Barbacoa can be made up to 2 days in advance.
  • Start to finish time for this recipe is based on using the pressure cooker to cook the barbacoa. You also may use your oven or slow cooker as directed on the box.
  • Our recipes do not call for preheating your air fryer. Just set the temperature and start. Cut a square of cooking parchment paper to fit the bottom of the air fryer to reduce mess and prevent burning. Never preheat with parchment paper alone.
  • Air fryer temperature control settings vary according to brand and model. If your air fryer does not have the exact temperature setting called for in the recipe, consult your manual for suggested temperature settings.
  • Corn tortillas may crack if not warmed. Brushing each tortilla lightly with vegetable oil and warming briefly in the microwave until they are soft enough to roll will prevent them from cracking.
  • Leftover barbacoa can be used to make flavorful tacos, burrito bowls, enchiladas, or served over rice.
