Ingredient List

Chicken Tinga

  • 1 1/2 to 2 lbs boneless skinless chicken breast or thighs
  • 1 box Mezco™ Tinga Flavor Duo Sauce and Spice & Herb Blend
  • Water, as called for on box
  • Onion, as called for on box

Tacos

  • 12 soft corn tortillas (6 inch)
  • 1 cup guacamole
  • 3/4 cup chopped white onion
  • 3/4 cup crumbled queso fresco or Cotija (6 oz)
  • 1/3 cup fresh cilantro, roughly chopped
  • Fresh lime wedges, if desired

Preparation

  1. Cook chicken, water, onion, Sauce, and Seasoning as directed on box using preferred cooking method; shred chicken.
  2. Heat tortillas as directed on package. Using slotted spoon, add slightly less than 1/3 cup chicken tinga mixture to each tortilla, and top with guacamole onion, crumbled cheese, cilantro, and serve with a lime wedge.

Tips

  • To get your meal on the table even faster, prepare the chicken tinga mixture through step 1 up to two days ahead. Reheat the shredded chicken and sauce mixture in a 10-inch skillet before moving on to step 2.
  • Make it your own, and garnish with your favorite taco toppings: pickled red onions, Mexican crema, sour cream, or hot sauce.
  • Look for guacamole in the refrigerator section of your local grocery store.
  • Queso fresco is a creamy, white Mexican cheese that crumbles easily and can be found in the cheese aisle of most supermarkets. Cotija or shredded Monterey Jack cheese can be substituted as well.
  • Start to finish time for this recipe is based on using the pressure cooker to cook the chicken tinga. You also may use your stove top or slow cooker as directed on the box.
  • Serve these tasty tacos alongside your favorite tortilla chips and salsa or a fresh green salad.
